They say that hunger is the best cook and fresh air the best spice. But with a little preparation and a yeast dough you bring along, it's possible to make something that tastes really good.
You can give the classic bread roll a culinary twist or conjure up a gourmet pizza - simply by adding some wild ingredients that you can easily find or catch in Nature Park Lillebælt, such as crabs and bladderwrack.

Unfortunately, we can't eat our way out of the problem

One of the reasons why there are too many crabs in Lillebælt is that there are far too few cod.
Although cod has always been a popular and healthy food fish, it has unfortunately been subject to overfishing, so the cod stock today can no longer be said to be sustainable.

One of cod's primary food sources is crabs. However, when the crab has no or enough enemies, the crabs explode in numbers.
Not only that, crabs eat cod young/juveniles, leaving even fewer large cod to eat the crabs. Unfortunately, this is a vicious cycle that keeps the ecosystem unbalanced.

Feel free to eat, there's plenty

The population of shore crabs in Lillebælt has exploded. During a test fishery in a small area of Lillebælt, DTU Aqua was able to retrieve eight tons of crabs in fourteen days, with no apparent noticeable decline. In less than two hours, the pots used to catch crabs were filled up again.

Open to nature's larder in Lillebælt

It makes sense to use the resources that nature's pantry offers. Wild ingredients that we have complete freedom to utilize, even for free. Shore crabs are an enormous resource, partly because there are so many of them and partly because they are a great delicacy. In terms of taste, the shore crab is extremely delicate, on par with lobster and Norway lobster.

    Try the wildest recipes from Lillebælt

    Crab pizza

    Choose a long-risen dough for a classic Neapolitan pizza. Spread the pizza with a white base of homemade Funen smoked cheese cream and Lillebælt crab stock. Top with mixed grated cheese, freshly boiled crab, fresh mozzarella, freshly chopped chives and dill, and grated lemon zest. Season to taste with sea salt and freshly ground pepper. Finish with some fresh and grilled seaweed on top. Enjoy your meal.

    Roasted bladderwrack chips

    Heat the olive oil in a cast iron pot over the fire. You can test if the oil is ready by dropping a small piece of seaweed into the pan. If it bubbles and sizzles immediately, the oil is ready.
    Fry the seaweed until it has a nice color and is crispy. Remove the seaweed with a slotted spoon and let the seaweed drain on a piece of grease-absorbing paper towel. Sprinkle with flaky salt. You now have the most delicious chips you could wish for.

    Crab bisque

    Boil water in a pot until it is boiling hot so the crabs die instantly. Take them out and discard the water. Crush the crabs and pour a couple of liters of water into the pot and simmer for about 15 minutes. Then strain all the crab pieces from the stock. Add a finely chopped leek, three carrots, two onions and 1 garlic along with ½ liter of cream and 1 can of tomato paste and simmer for about 15 minutes. Season to taste with salt and pepper. Enjoy.

    Limiting the crab population is just one of several efforts that together strengthen Lillebælt

    Eating a few crabs on a pizza won't make much difference. But you have to start somewhere. We're working with local fishermen to eventually harvest crabs that can be used as food on a larger scale

    In collaboration with local enthusiasts, Lillebælt Nature Park has developed a number of activities that have regenerative potential. Here, individuals, tourist groups, schools or companies who want to make an extra effort for nature can actively contribute to restoring the balance of the Little Belt ecosystem.

    We reduce the crab population

    The population of crabs in the Little Belt is far too high. By catching crabs, you benefit the ecosystem in the belt. The crab population needs to be regulated because it destroys the eelgrass and eats fish fry.
